Yet this has never prevented Jean-Marie Gautier from working in the firmament of French cuisine or from receiving heads of state, monarchs, personalities from the cultural elite and major entrepreneurs, notably at the Hôtel du Palais, where he was in charge of the kitchens for 29 years.
Meilleur Ouvrier de France, crowned "chef of the year" in 2016, one year before receiving the leaders of the G7 countries in Biarritz, he is now a gastronomic consultant at La Folie Boulart. His passion for delighting the palates of others remains intact.
